Hang on to Summer with Some Barbecue Inspiration

I don’t know how it is where you live (though, frankly, I probably do since most of my readers are local), but this has been a completely strange year weatherwise in Arkansas. We went from warmer than we’d like to a few cold days to finally more like what we expect from fall: cold mornings and warm afternoons, such that you have no idea at all how to dress for the day.

Though we all love fall, there’s a little bit of almost everyone I know that seems to want to hang on to summer just a little bit longer. Can’t we have one more long, warm weekend? One more day playing in the yard? One more cookout?dibs on my ribs

I can’t give it to everyone in town, but I and some other people around here are going to at least get that one more cookout in the form of the Kraft Dibs on My Ribs Cook-off Event. I don’t know if you’ve heard about this before, but it’s a BBQ contest sponsored by Kraft, McCormick, Wal-Mart and Tyson Foods that collected recipes for pork ribs that could be prepared inside the home and out on the grill.

The finalists in each category will converge on Tyson World Headquarters in Springdale on Friday to prepare their dishes, and the top three in each category will be honored at Walmart’s headquarters the next day. Grand prize is a year’s worth of groceries, so it’s a pretty big event.

I’m excited to get to take part in #DibsOnMyRibs and taste all the goodies, and hopefully get a peek at Tyson’s kitchen, too. (My husband works at Tyson, but I’ve never seen the kitchens. He had nothing to do with me being invited to this event, by the way, and didn’t even know it was happening until I told him about it.)

Thinking about barbecue and attending the BBQ cook-off event got me thinking about ways I could use BBQ sauce in my own cooking. I’m not an incredibly adventurous cook, and I like things that are fast, so Kraft BBQ Sauce — or really any kind of sauce — is great for me, because all you have to do is pour it on whatever, cook it up and you’re ready to go.

And by whatever, I mean whatever. You can use BBQ sauce on any protein out there, from pork to beans and beef to tofu. Yeah, you heard me, tofu. That was actually the first place my mind went when I started thinking about a quick meal I could make with some bottled sauce. It’s actually a great idea if you think you don’t like tofu, because it will taste like that familiar flavor instead of the nothing tofu usually tastes like.

First I headed to Kraft’s website and found the BBQ sauce section. It turns out there are a lot more varieties than I remembered. I had my eye on the honey and roasted garlic option, and I love that you can see the nutritional information right there.honey garlic bbq sauce

So I headed to my local Walmart to do a little shopping, but couldn’t actually find the sauce I wanted. So I went with a bottle of regular honey and a bottle of the thick and spicy instead.

What to Make?

I don’t have a completely clear vision of what I’m going to make yet. My initial plan was baked BBQ tofu with roasted vegetables and BBQ couscous in a pita. And that still sounds pretty darn good, but I’m thinking about sweet potato hash instead. Maybe BBQ-glazed sweet potatoes?

What would you make with these ingredients? I’d love to hear your thoughts. And I’ll let you know what I came up with and share the (hopefully wildly successful) recipe with my roundup of the big BBQ event next week.

  1. It certainly looks like you have some great fixings for a tasty BBQ! The event sounds like a great deal of fun and I am looking forward to hearing all about it, as well as being inspired by your own BBQ creation! We’re in Michigan but we keep the grill at the ready all year round 🙂

  2. My husband does all the real “grilling” in our house (and he’s been known to do it in the snow, too) but that doesn’t mean I don’t like BBQ sauce!
